Chocolate Cheesecake, Anyone?

This weekend, I decided to make us a Chocolate Cheesecake, and well, I bought too many ingredients.  So, I cut the recipe in half and shared it with a friend, and well, I want to share it with all of you.

Chocolate Cheesecake

1 Chocolate Keebler Crust
2 packages cream cheese
1 can condensed sweetened milk
1/3 cup unsweetened cocoa powder
1/3 cup sugar
1 tsp vanilla
2 eggs
dash of salt

Preheat oven to 400.

Combine all ingredients except eggs in a bowl until just blended.  Add eggs and blend again until just blended.  Do not over blend!  Pour into crust.  Cook in 400 degree oven for 20 minutes, then lower the temperature to 325.  Cook for 35-40 more minutes.  Test for doneness by inserting a knife in the center.  It should come out clean.  (Be advised my time is based on a convection oven.  You may have to adjust your time slightly in a normal oven on the second baking time.)

Let cool, and enjoy.
